I'm pretty sure that is what auto-anchor is for.

You can just essentially use Childs and adjust the sizes of things accordingly at run-time.
It's what I do to prevent the hassles of players having different resolutions.

It's best to learn how anchors work instead of always relying on auto anchor all the time. Sometimes you don't want things to resize vertically, but you want them to resize horizontally. Case in point: An input for communication.
