If you are a channel moderator, you can see how many times a particular project has been downloaded. Go to your hub, then select the channel and click the project name in the submissions list.

And is there a way we could work out percentages? Like say, if somebody suscribes to something that costs 10 times, person [x] gets 1 dime of it?

It's not built in, but there are ways to handle it. Search for the phrase "cash out" on the EKA board.
